    A native Midwesterner who has spent many years living in different areas of the country, Bill has developed an appreciation for the art of craft brewing.

    Bill grew up in Birmingham, Michigan, a suburb of Detroit. He grew up on the water, sailing on the Great Lakes, and is an avid biker and snowboarder.  After earning his degree at Michigan State University, he moved to Chicago where he embarked on a career in sales and met a nice girl from Iowa named Jacque.

    They eventually moved to San Francisco and during his time on the West Coast, Bill developed a taste for good food, good wine and good beer.

    Upon moving back to Chicago, Bill found that many of the area’s breweries produced delicious beers that soon rivaled his favorite wines.  Fast forward a few years and Bill was enrolled at the Siebel Institute in Chicago and talking beer with anyone who would listen.

    In 2012, Bill and Jacque moved to Iowa to raise their young family and realize Bill’s dream of opening a brewery.

      Travis grew up just over the Iowa border in Sterling, Illinois. He moved to Cedar Rapids from Illinois in 2000 and began working as a bartender at The Cedar Brewing Company. In 2005, he suddenly found himself in the role of Brewmaster, having never brewed a batch of beer in his short life.

      A former brewmaster from Molson/Coors trained Travis in all things beer.  Luckily, the local brewing community is also full of great people. Help was on the way in the form of fellow brewmasters in Iowa and around the country, home brewers, the internet (podcasts like The Brewing network’s shows) and every book available on the topic.

      At first Travis focused on how to use the equipment to move liquid around and how not to kill himself with boiling liquids, chemicals, poisonous gases, snakes and the like.  But through the on the job training, a lot of reading and help from all of those great sources Travis learned to make fantastically tasty brews and is still learning every day.

      After a chance meeting over Czech pilsners, Bill brought his idea of opening a production brewery to Travis.  Travis is thrilled to be taking on this new challenge and to make beer on a slightly larger scale with distribution being the main focus.

      Our beers:

      We use German Pilsner Malt and real Czech Saaz hops to create this Czech-style Pilsner. Packed with bready malt flavor and a spicy, floral hop character, this medium bodied lager is crisp and refreshing. ABV 5.5% IBU 40
      This IPA is loaded with a hop character that is reminiscent of lemons, passionfruit, and pine. It's a bold flavored beer that is also dry and very drinkable. ABV 7.5% IBU 70
      A hoppy wheat ale that is crisp, dry, and smooth. Copious amounts of C-hopes and the delicious Mosaic hop give the beer a complex aroma and flavor of fruits, berries, citrus and herbs. Highly drinkable and well balanced. ABV 5.3% IBU 52
      Traditional English Brown Ales are delicious. But we wanted to go a bit bigger. So instead of a great 4.5% ABV English Brown Ale, we made an even greater 7.5% American Brown Ale. We did use the best malts and hops from the UK, we just used lots more of them! Combine those with an American yeast and you get a big, bold, brown ale that is nutty, and chocolatey and finishes crisp and clean. ABV 7.5% IBU 55
      This ruby red ale is dominated by a complex malt character and supported throughout with a heavy load of American and Australian hops. Expect a full bodied, well balanced beer with fresh baked bread and biscuit-like malt flavors along with a unique hop aroma from the use of Australian Ella hops. It is 8.2% ABV and 80 IBU.
      A full bodied, silky smooth stout that is slightly sweet and warming from the higher alcohol content, but still finishes clean and crisp making it very drinkable. The use of dark roasted malts gives way to roasted coffee and toffee flavors, as well as some pleasing dark, dried fruit characters. ABV 7.0% IBU 50
      Many hops were harmed in the making of this Double IPA. We utilize a technique called hop bursting, as well as three huge dry hop additions to create a hop character that is intense but not harsh. The combination of American and New Zealand hops creates a zesty citrus and tropical fruit palette that is well balanced by the use of Pale Ale and Munich Malts. ABV 9.2% IBU 100
